Da Kind Soup

When I was in CO in December it wasn't particularly cold. It was 50 degrees but crisp most days. In the sun it was warm but in the shade a slight chill set in. On one such day, we decided to head up to Evergreen from Denver in hopes of seeing a little snow. We visited the small town and had lunch at Da Kind Soup.

Da Kind is just outside of town in a small strip mall esque area. I think it's a remodeled continence store but they hide the original building well. The restaurant serves a variety of paninis and soups. Each day there are 10-12 different soups to choose from in a variety of sizes along with the sandwiches. The employees let you taste as many soups as you want until you find your favorite.

The sandwiches come a little after the soup but that's fine because it gives you a little time to eat your hot soup before you get your hot sandwich. This restaurant is a creative concept and a nice warm and comforting lunch in the mountains.
